Gluten "Chicken"
Notes from Peggy Robinson

1/3 cup whole wheat flour
2 cups gluten flour
3-4 Tbsp “Chicken” Seasoning
2 cups water

Mix dry ingredients together thoroughly in bowl.
Add water and stir until all water is mixed in.
Use hands to knead until all dry spots are gone.
No need to knead like bread. Just be sure all the flour is mixed in.
Form dough into log shape and steam in a steamer basket or rice steamer for about 45 minutes.


This recipe makes a lot, so I like to cut it in half.

After cooking the gluten “chicken” log, it is also very tasty to slice and use in sandwiches without breading.

It is also great if you grind and add barbecue sauce, and serve on bread as an open-faced sandwich.

The gluten “chicken” makes a great treat for dogs!
