The Bench also sits over one of the world's largest aquifers, which means that water is easily available. In order to keep such valuable soil healthy, farmers and growers along the Bench rotate crops every year, planting potatoes, grain, wheat, and barley.
Another thing that makes the Bench a perfect place for growing potatoes is the dry climate. As a result of this climate, diseases that plague other areas, such as late blights, early bights, and many fungus diseases, do not affect Bench Mark potatoes. The warm days and cool nights are ideal for raising a quality crop of Burbank Russet potatoes.
All of these factors create a potato product that can be stored for virtually up to a year, allowing you to keep potatoes for the entire season.
