VERY TASTY VEGGIE STIR-FRY

 

Ingredients:

1 Cup chpped eggplant

1 Cup frozen or fresh spinach

3 oz. Broccoli slaw

1 Cup sliced mushrooms

1 chopped tomato

1 cup sliced zucchini

2 tsp of olive oil

Tony Chacheres seasoning or Adobe seasoning (found on Mexican food aisle) to taste

 

Directions:

Pour olive oil in a frying pan, heat to medium heat

Place 1/2 the vegetable in the pan

Sprinkle with seasoning

Place remainder of vegetable in pan

Sprinkle with seasoning

Cover the veggies and stir fry for about 8 minutes (stir often) or until tender.

 

Makes 2-3 servings.
