A Few of KaraLyn's Favorite Recipes

Over the years I have gathered from friends, family, and the internet, some great recipes. At least, we think so! I will put up a few each month. So, if you see one you think you will like you can give it a try. And, if you recongnize one as your own - thank you for sharing it with us!

Poppy Seed Bread
(I got this great recipe from an awesome lady - my old boyfriends mom! I am so glad that I was able to snatch this from her before the break-up!)

Beat:

3 eggs

1 1/8 c. oil

2 ¼ c. sugar

In a separate bowl mix:

3 c. flour

1 ½ tsp. salt

1 ½ tsp. baking powder

Add the two mixes alternating with 1 ½ c. milk.

Add:1 ½ tsp. almond, vanilla, and butter extracts and 4 T. poppy seeds (batter will be runny)

Bake at 350 degrees for 1 hour.  Top with glaze.

Glaze:

¼ c. of orange juice (already made)

¾ c. sugar

½ tsp. of almond, vanilla, and butter extracts

Heat until the sugar is dissolved and cool, a little. Spread all over the bread with a pastry brush. Use it all. You really can't have too much of this stuff. It is awesome!

 

Crock Pot Cream Cheese Chicken

 

2 whole chicken breasts

2 cups carrots

1 package dry Italian Dressing

Put chicken into crock pot.  Sprinkle with Italian dressing.  Add carrots. Cook on low 6-8 hours.

Mix:

1 can Cream of Mushroom soup

8 oz. cream cheese (I use the 1/3 less fat kind)

1/2 cup chicken broth 

 

Cook in saucepan until bubbly.  Pour over chicken and carrots.  Cook 30 more minutes on high.

 

 

Fiesta Black Bean Soup (Crock Pot)

 

6 cups chicken broth

2 (16 oz.) cans black beans, drained and rinsed

1/2 lb. ham, diced

2 tsp. oregano leaves

1 1/2 tsp. thyme

2 cloves garlic minced

1 tsp. ground cumin

 

Combine ingredients and cook on low 8-10 hours or high 4-5 hours.  Garnish with sour cream, diced tomatoes and grated cheddar cheese. Sliced avacoados are also VERY GOOD in this. (If you like them.) 

 

 

Mom’s Brownies
(These are awesome brownies that my mom makes.
The frosting is the secret ingredient, I think.)
 
Mix:

1 cup butter (melted)

2 cups sugar

½ cup cocoa

Beat in 4 eggs, one at a time. 

Add:

1 tsp. vanilla

2 cups flour

½ tsp. baking powder

½ tsp. salt

Spread in a 9 x 13 baking dish and bake at 350 degrees for 25-30 minutes.  Frost with mom’s fast fudge frosting.
 
Mom’s Fast Fudge Frosting
 

1 package (2 lbs.) powdered sugar

2 cubes butter, softened

¾ cup cocoa

1 tsp. salt

1/3 cup boiling water (a little more if needed)

Add all ingredients except salt and water. Bring the salt and water to a boil and add. Mix thoroughly. Spread on your favorite cakes and brownies.  (I have also added a little bit of orange extract.  If you like the orange flavor with chocolate, it's a nice twist. )
