Sugar Water Recipe and Making Flavor Syrup

Sugar Water is easy to make, that is why it is nick-named "Simple Syrup!"

Sugar Water Recipe

Pour about 2-gallons of warm to hot water (not so hot that you cannot hold your hand under the water comfortably) into a 5-gallon head-pack container. Add 1 oz. of granule preservative. Shake until granules are completely dissolved (this is vitally important as granules will not dissolve if you do not dissolve them prior to adding the citric acid). Once granules are dissolved, add 1 oz. of liquid citric acid. Then add 25 lbs. of sugar and shake well until sugar is dissolved. Fill the headpack with cold water to the five gallon mark (the five gallon mark is approx 3/8” above where the spout of the headpack connects to the main body of the headpack). Once the cold water is added to the 5-gallon mark, shake well to ensure sugar water is not only totally dissolved but also that the sugar water is mixed throughout evenly and not stratified at the bottom (we have found that if mixing with the Sno Shack hand mixer that mixing for at least 3 minutes is satisfactory).

Don't need five gallons? Just make one!

If mixing simple syrup in 1-gallon increments to make 4 quarts of sugar water at a time we recommend using a cleaned milk jug. Fill container with warm water approx. 2 ½” from the bottom of container, add 5 lb. bag of sugar, mix well until dissolved, then fill with cold water until at the one gallon mark. Shake very well to be assured that sugar is evenly distributed throughout.

Flavoring

Concentrates are sold in easy to dispense pint bottles for your convenience. Use flip- top caps to dispense concentrates easily. Sno Shack also sells one ounce measuring bottles to measure concentrate precisely. Please let us know if you would like to order any of these small measure bottles.

Making a Quart of Syrup

Pour one ounce of concentrated flavor into a one quart flavor bottle. Fill with sugar water to the quart measuring line.

Making a Gallon of Syrup

Use 4 ounces of flavor concentrate for a full gallon of flavored syrup.Fill the remainder of the gallon with sugar water. Mix concentrate evenly throughout the bottle once sugar water is added.

Add Ice Cream

We call it a "Glacier." Once you try it you'll be hooked!

Add a scoop of vanilla ice cream to the bottom of the cup & a squirt of flavor before you shave the ice & enjoy the best shaved ice you've ever had (especially if it has cream on top)! Charge an extra $0.25 or $0.50 for it & watch your customers fall in love with your product all over again!

Note: Don't add as much flavor to the shaved ice as you normally would when making a glacier or you'll end up with what we call a "floater" (so much syrup you can see the ice floating in it).


Flavor and Sugar Water Shelf Life

FLAVOR CONCENTRATES:

We are always getting asked how long our flavors concentrates will last. The good thing is... its a long time!

If the flavor concentrates are kept in a consistent climate that is room temperature or lower they should easily last 2-3 years. Ideally you are using up what you order each summer but if you have extra flavor concentrate they should be just fine until the next summer, but try to use them first. We have noticed that some flavors will tend to weaken in flavor over time if older than 2 years but they are still usable. We always suggest making sure they look, smell, and taste good before serving to a customer!

SUGAR WATER/FLAVORED SYRUPS:

As for flavored syrup (flavor concentrate once it is mixed with the sugar water)... If the sugar water is not preserved, use it quickly! It won't last longer than a few days and we suggest keeping it refrigerated when not in use.

Sugar water/ flavored syrup if preserved will last a lot longer and you can keep them on the shelf in your air-conditioned Sno Shack. We suggest using it within six weeks but it should last a little longer than that. If you are uncertain about your sugar water or syrups being fresh we suggest tossing it out... better safe than sorry, especially when serving customers.
